cookies sagu keju ^_^ super renyah dan meleleh dimulut..

SAGO CHEESE COOKIES

portion : 4 medium sized jar
Level : easy 

      Sago cheese cookie is a modernized 'kue bangkit', an Indonesian traditional cookies which are mainly made of Sago flour ( you can also use tapioca flour ) and coconut milk. But unlike their 'ancestor', Sago cheese cookie contains butter and cheese in the mixture. Usually these cookies are served on special occasions like Hari raya idul fitri, Chinese new year or Christmas. 

      Sago cheese cookies and kue bangkit has a nice strong coconut milk aroma. When you bite them, it will melts right away in your mouth. Once you tried them out, you wouldn't wanna stop. Yes,this is a very addictive type of cookie. My mom could finish one full jar in just one day! (Lucky for her ٩(˘◡˘)۶, I can make one for her every time she craves for one). For those who haven't tried this cookie before, i recommend you to try making them ^^ (You'll know why she could be so addicted to it).

INGREDIENTS:  
♥   375 grams Tapioca / sago flour
♥   150 grams Margarine / Butter
♥   1 Large Egg + 1 egg yolk
♥   175 grams sugar 
♥   75ml Coconut Milk
   75 grams finely grated Edam / cheddar cheese
♥   1tsp vanilla extract
♥   Pinch of salt ( if your margarine/butter is a salted one,just skip using the salt )

INSTRUCTIONS:
  1. In a bowl, add in margarine and sugar , Mix with medium speed until white and fluffy.
  2.  Pour in egg and Coconut milk, Mix again with medium speed till well combined.
  3.  Add in grated cheese, mix well.
  4.  Add in flour,vanilla extract,and salt gradually, and fold with spatula till everything combines well.
  5.  Pour into a pipping bag, use a star tip and pipe the cookies according to your liking.
  6.  Bake in the oven at ± 130-140'c for ±45-50minutes ( on middle rack ).
  7.  Let them cool before putting them into a jar/container.

    TIPS FOR MAKING A TASTY SAGO CHEESE COOKIES 
    1.  Use good quality and fresh ingredients.  
    2.  Substituting margarine with butter will result in a tastier cookies, but not as 'fluffy' as the ones made with margarine (As butter has a low melting point, so using margarine will help you get a more stable dough). You can mix 50:50 for best result.
    3. To get a crispier cookie, Make sure to bake your cookies at low temperature (As suggested , but please adjust with your oven as every oven works differently). Never bake cookies at high temperature. cookies will gets burnt easily but the inside will still be soggy and under-cooked. 
    4.  If you are not a fan of Edam cheese, you could substitute it with cheddar cheese.
