Resep bolu kukus susu tanpa air soda \(✿^‿^✿) / So fluffy & tasty!

BOLU KUKUS SUSU / MILK STEAM CAKE

   Bolu kukus is a traditional Indonesian steam cake. It has a signature 'bloom and crack' shape on the upper part of the cake, which is unexpectedly not very easy to achieve. You might have to try several times before achieving successfully 'bloomed and cracked' cakes. Usually this cake is made with soda water such as Sprite/Fanta.(You can find recipe here).

    But in this post i will give you a recipe which will substitute the use of soda water with milk.Milk is a healthier option for those who would like to skip soda water in their daily menus.So for those who want to make this cake without using soda water, please feel free to try out this recipe ^_^ 


INGREDIENTS: 

♥   55grams egg ( Large )
♥   150 gr granulated sugar

♥   1tsp TBM / SP / Ovalet ( cake emulsifier )
♥   90ml Milk
♥   150gr all purpose flour / medium protein wheat flour
♥   1/4 tsp salt
 ♥   1 tsp Baking powder double acting / Baking powder
♥   1/4 tsp Vanilla essence

OPTIONAL INGREDIENTS :  
♥   Mocca / strawberry / taro / pandan / chocolate essence,etc. ( any flavor you like )
♥   Rice chocolates / sprinkles

INSTRUCTIONS:
  1. Fill the steamer with water (not too little, not too full because it can make the cake wet and soggy when water bubbles boil), turn on the stove over high heat, cover with a cloth wrap (so that the steam does not drip onto the cake while steaming).
  2.  Beat eggs and sugar until fluffy and white (ribbon stage).
  3.  Add in the TBM / ovalet / SP into the batter, beat again until white and stiff.
  4.  Pour in milk and mix with a slow speed ± 5-10 seconds, put the flour gradually and mix again with fast speed ± 5-10 seconds, turn off the mixer.
  5.  Trim bowl and batter with a spatula, making sure the dough is well blended..
  6.  For those who would want to mix some flavors, take some of the batter into a separated bowl, mix and stir with a spoon, set aside.
  7.  Pour batter into paper cups which are already based with cup moulds (I used double as my paper cups are thin) up to 95% full.
  8.  Steam it until it is cooked evenly ± 15 minutes.
( you can create a zebra motif by alternately pour in different flavors layer by layer.)

TIPS FOR MAKING A PRETTY STEAM CAKE  
  1.   All the ingredients should be Fresh and good in quality. Especially the eggs, because eggs that are not fresh will not raise perfectly.
  2.  Be sure not to skip / reduce the amount of TBM / SP / ovalet (cake emulsifier) or else this cake will not bloom well. The use of cake emulsifier has a great impact on the stability of the egg and batter mixture, will not easily dilute / over-beat. (like the picture below, I did reduce the amount of it, the result is a dense cake which didn't bloom perfectly).

  3.  Make sure that the steamer has been preheated and closed tightly. In order to rise perfectly and have a crack and bloom shape on top, the batter requires a stable pressure and high temperature.(the cake on the photo above was not perfect due to the lack of use of cake emulsifier and placement of the lid that is not tight enough).
  4.   Follow each step of the instructions precisely.
  5.  Use cup molds ,steel ones preferably, to make an evenly stable heat throughout the cake.
  6.  It's very important not to open the lid of the steamer while they are still in a steaming proccess. Make sure the cakes have already cooked evenly (more than 10 minutes - 15 minutes). Opening the lid of the steamer during the steaming process might results in flat, dense ,deflated and not perfectly bloomed steam cakes.
  7.  Use double layers of paper cup if the material is too thin, so that the cake does not get wet and soggy from the hot steam.
