INGREDIENTS (FOR CHOCOLATE PUDDING):
♥ 7grams / 1 sachet of plain agar-agar powder ( i use swall*w globe brand )
♥ 450ml water
♥ 450ml plain pasteurized milk
♥ 120 grams sugar
♥ 30grams cocoa powder ( If you like it more 'chocolatey' ٩(^◡^ ) you can add more )
♥ Pinch of salt
♥ 250ml plain pasteurized milk
♥ 50 grams sugar
♥ 1 egg yolk
♥ Pinch of salt
♥ 1/2 tsp Rum essence / vanilla essence ( Optional )
INSTRUCTIONS ( FOR CHOCOLATE PUDDING ):
- In a sauce pan, heat the 450ml water & 450ml milk with med-high heat.
- In a bowl, mix in sugar,cocoa powder, agar-agar powder and salt,stir until mixed well.
- Pour in the dry ingredients ( step no.2 ) into mixture no.1, stir well and bring to a boil.
- Pour into pudding cups and let it cool ±45-60 minutes.
- in a bowl, add in sugar,pinch of salt,stir until mixed well.
- In a sauce pan, add in milk,egg yolk and dry ingredients ( step no.1 ) and vanilla/rum essence,stir until well combined.
- Put the pan on the stove and heat with med-high heat.
- Stirring continuously ,bring to a boil and let it cool.
- Use good quality and fresh ingredients.
- Don't use liquid ingredients more than suggested above or it will be too runny and soggy.
- Premix all the dry ingredients before adding it into the liquid ingredients to make sure your mixture is smooth and has no lumps.
- For fine and silky smooth texture, make sure to strain them soon after they are done.
- Let the puddings cool completely before taking them out from the cups, to let them set perfectly. You can put the pudding in the chiller to help them cool more quickly ( but make sure to let them chill in room temperature for around 10-15 minutes before hand. Putting hot boiling ingredients into the refrigerator is not recommended. Refrigerator could be damaged).
- Put them into the chiller. Dairy products can only stand room temperature for no more than 2 hours.
- For those who are allergic to dairy products, you can substitute it with soy/almond milk.
- If you don't like it sweet, you could reduce the amount of sugar as your preference.
