Valentine's is coming very soon and i would like to post some recipes which all of you can make for your special ones on this very special upcoming event. For the first valentine-inspired recipe, I will give you a strawberry cheesecake recipe, Which is a no-bake one. Meaning you don't have to bake them in the oven. Tools you'll need are only a mixer,a cake pan and chiller. It's so easy and simple to make,if you follow the steps and have all the complete ingredients, i guarantee you a fool-proof result even for those who never bakes a cake before. This recipe is really worth a try, It's classy and tasty,yet so easy to make. Let's try making them for your loved ones ^^ .
INGREDIENTS (for base crust):
♥ 140grams graham crackers ( you can substitute with digestive crackers or any other crackers you like)
♥ 70grams of melted butter
INSTRUCTIONS FOR BASE CRUST:
- Melts the butter and pour it into a bowl.
- Put the graham crackers into a plastic bag, Smashed the graham crackers with a rolling pin or a jam/chocolate jar till it became finely crushed like sands.
- Put the crushed crackers into a bowl, and pour the melted butter into it. Stir it well with a spoon till all the crackers and melted butter have incorporated well. ( when you touch it, it will feels like wet sand consistency).
- Pour the mixture to a pie or cake pan, press it tightly with the spoon base until it forms a firm pie base.
- Cover with a plastic wrap,keep it in the chiller(30 minutes or more).
INGREDIENTS (for cream cheese batter):
♥ 250grams of Cream cheese ( room temperature )
♥ 120ml heavy cream
♥ 75grams of powdered sugar
♥ 75grams of chopped strawberries
♥ 1tbsp lemon juice
♥ 1/4 tsp salt
♥ 1tbsp gelatin powder + 2tbsp hot water (very important ingredient, never skip using gelatin. it helps the cream cheese batter to set).
♥ 1/4 tsp Pure vanilla extract (optional)
♥ 1/2tsp (1grams) agar-agar powder (for glazing)
♥ 100ml water (for glazing)
INSTRUCTIONS FOR CREAM CHEESE BATTER:
- In a small bowl, mix gelatin powder with hot water (>90-100'c) stir well, set aside.
- In a big bowl, add in cream cheese ( cut into small pieces ), heavy cream,powdered sugar,vanilla extract,lemon juice & salt. mix at high speed till all the ingredients are blended well and form a smooth creamy batter.
- Pour in the melted gelatin mixture and mix till well combined.
- Add in chopped strawberries,mix till well combined.
- Take out the base crust from the chiller, Pour all the batter into the cake mold.
- Chill it in the chiller for more than 2hours or more to let the cheesecake sets perfectly.
- Garnish them with strawberries or any decoration you like.
- For glazing, cook agar-agar powder in water,stir well till it comes to a boil.
- Pour it on top of the cake, keep in the chiller till it sets.
