resep bolu jadul khas Belanda ,Ontbijtkoek ^_^ aroma rempah2nya wangi banget!

ONTBIJTKOEK / DUTCH SPICED CAKE

    Ontbijtkoek literally means "breakfast cake" in Dutch. It is a type of spice cake or gingerbread that is similar to a coffee cake and made with very little fat. The cake is typically eaten in the Netherlands, Flanders, and Indonesia.
    The Dutch typically serve breakfast cake topped with butter. It may also be eaten with cheese or jam. When it is eaten as a snack, tea or coffee is typically served as well. It is sometimes also considered a dessert.
    A distinctive feature of ontbijtkoek is its lack of fat. The cake is made without any butter or oil, and usually without eggs. Milk is the only source of fat in this traditional breakfast cake.
Ontbijtkoek is usually made with rye flour, although there are also versions made with whole wheat flour. Cakes may contain a variety of spices, often including ginger, cinnamon, nutmeg, and cloves. Sometimes cardamom and coriander are included as well. The cake contains salt and a leavening agent, such as baking powder, as is typical for most cakes. This type of breakfast cake also is made using less refined sweeteners. Brown sugar, molasses, honey, or a combination may be used. Palm sugar also is commonly used in Indonesian versions.     In this recipe, i will make an Onbijtkoek cake which has been modified with the Indonesian taste. Onbijtkoek commonly found in Indonesia was made with butter and has a fluffier texture. I'm not very fond of spekkoek's strong aroma so i use cinnamon powder mixed with a few pinches of spekkoek powder (a mix of spices, such as cardamom, cinnamon, clove, mace and anise). My entire house smells so good while baking this cake. Usually i would always let my cakes cool down before i ate them, but i just couldn't wait till this wonderful cake was totally cooled off. Hmm, So soft and the hints of the spices in it were really nice and relaxing. I suggest you try this recipe : ) you won't regret it!

Resep mantou coklat gulung ٩(^◡^ )♥ empuk dan lembut! cocok untuk vegetarian dan yang mau diet ; )

CHOCOLATE MANTOU

adapted from : NCC COKLAT MANTOU GULUNG
Duration : 200 mins
portion : 15 pieces
Level : Intermediate 
INGREDIENTS : 
 A) Starter dough
  100ml warm water
  2½ tsp instant yeast 
1 tbsp sugar 
130grams all purpose flour
(B) Main dough
 350grams all purpose flour
 110grams granulated sugar 
½ tsp salt
(C) 
150ml water
 2 tsp baking powder 
½ tsp vinegar ( I skip using vinegar )
* stir them together for a few seconds before using

(D) Chocolate paste 
1 ½ tbsp cocoa powder
 1 tbsp water
( you can also use chocolate paste )


INSTRUCTIONS:
~Starter Dough
1. mix all ingredients with low speed till well corporated.
2. set aside and cover it for 10minutes.

~Mantou dough
1. add in flour,sugar and salt into the starter bowl. Masukkan tepung, gula dan garam ke dalam wadah starter dough. add in ingredients C gradually. Beat and mix till the dough is soft and elastic.

2. divide the dough into 2. Take 1 part of the dough,add in chocolate mixture and knead till well corporated.
3. Put the dough into 2 separated bowl, and cover with a plastic wrap. Set aside to let it rises for 1½hours.
4. Flattened the dough, roll each dough till it has 5mm thickness each. ( white one first ).
5. Place the white dough at the bottom, brush it with a little water ( don't use too much, water will help the dough to stick one to another) all over the surface with a brush and place the chocolate dough on the top,adjust the size and widht according to the white one, and brush with water one more time on the chocolate dough's surface . 
 6. Roll the dough and cut them into your desired size and shape.
7. let it rest for 15 minutes inside your un-heated steamer.
8. start steaming with med-high heat till the water is boiled and let it steam for another 8-12 minutes (adjust with the size of your mantou) until all of the mantou have perfectly cooked.
9. turn of the heat. Let the mantou stay in the steamer for another minute before opening the lid.( to help prevent the mantou from deflating&shrinking ).
10. let it cool before consuming it. 
11. You may keep these mantou covered in a plastic bag or container in the chiller for 1 week and freezer for 1 month.

resep hot & spicy Korean rice cake aka Tteokbokki / topokki ^___^ Enak banget dimakan pas musim hujan gini!

TTEOKBOKKI (떡볶이)

    Tteokbokki (떡볶이; also known as teokbokki, ddeokbokki, topokki, and dukboki) is a popular Korean snack food made from soft rice cake, fish cake and sweet red chili sauce.It is commonly purchased from street vendors or pojangmacha. Originally it was called tteok jjim (떡찜) and was a savory braised dish of sliced rice cake, meat, eggs, and seasoning. (source from wikipedia ).

   In this recipe, i will be using fresh store bought rice cakes/Garaetteok (가래떡 in Korean). In Jakarta it's not easy to find this fresh rice cake, they were only sold in Korean market. I bought this at Mugunghwa Supermarket,Karawaci,Tangerang. They were also sold at Lotte mart supermarkets. It tastes almost like mochi,but has more firm and chewy texture. This tteokbokki tastes spicy and sweet at the same time. It is very nice to eat them while it's still hot,especially in these cold rainy days ^^. Let's check the recipe!

     Lately I've been addicted to dragon fruits especially the red ones. They taste sweet with a hint of sourness in it. Has a very deep dark red-purplish color, and it contains lots of vitamins in it. It helps to prevent and treat heart disease, cancer, and to help lower blood pressure. This is because the dragon fruit contains lycopene. Red dragon fruit also contains vitamins B1, B2, B3, C, calcium, protein and phosphorus. It also has a very soft and juicy texture and it helps me to feel full for a long time which really helps me a lot for late night cravings,especially while browsing delicious looking foods on instagram or while i was browsing for recipes.       Lemper is commonly known as a traditional Indonesian dish made from glutinous coconut rice filled with shredded coconut chicken filling and wrapped in banana leaves ( recipe here). But since the shredded coconut chicken filling also suits well to be paired with bread,they were also widely sold as bread too , and we refer them as roti ( bread in Indonesian ) lemper ( the shredded coconut filling itself is also referred as lemper too ).    Chinese new year is coming very soon and i'm looking for a recipe to be shared to you guys which suits for this event and It's been raining a lot in Jakarta these days and the weather has been pretty cold lately. So i decided to make some steamed Bao/ mantou recipe and i made them into some cute characters which are easy to make but still looks pretty. Hot steamed bao to be enjoyed in a cold weather sure is nice ^^. This recipe I'm sharing you guys has been adapted from Ci Vita's blog which in the recipe she made,she used some purple sweet potatoes in the dough, but i will not use any sweet potatoes in this recipe so i will modify the recipe a bit.

Valentine special recipe ♥ Strawberry no-bake cheesecake \(✿^‿^✿)/ so easy to make! yet so classy and tasty♥

STRAWBERRY NO-BAKE CHEESECAKE

    Valentine's is coming very soon and i would like to post some recipes which all of you can make for your special ones on this very special upcoming event. For the first valentine-inspired recipe, I will give you a strawberry cheesecake recipe, Which is a no-bake one. Meaning you don't have to bake them in the oven. Tools you'll need are only a mixer,a cake pan and chiller. It's so easy and simple to make,if you follow the steps and have all the complete ingredients, i guarantee you a fool-proof result even for those who never bakes a cake before. This recipe is really worth a try, It's classy and tasty,yet so easy to make. Let's try making them for your loved ones ^^ .
   Actually i almost never decorate my cakes before,as i only made them for my family. But for this Valentine theme recipe, I decided to decorate it a bit. I just simply use some strawberries and arranged them into a Sakura shaped decoration (as i like Sakura so much). for the middle part, i used some chopped mandarin orange ( i removed the skin and chopped them into fine pieces),some mint leaves to make it more vibrant and colorful and for the last touch, i pour some clear-colored jelly/agar-agar to make it looks glossy and help the decoration to stick in shape and stay fresh for a longer time.

EARL GREY CHIFFON CAKE

     A chiffon cake is a very light cake made with vegetable oil, eggs, sugar, flour, baking powder, and flavorings. It is a combination of both batter and foam type (sponge type) cakes.
Instead of the traditional cake ingredient butter, vegetable oil is used; but this is difficult to beat enough air into. Therefore chiffon cakes, like angel cakes and other foam cakes, achieve a fluffy texture by beating egg whites until stiff and folding them into the cake batter before baking. Its aeration properties rely on both the quality of the meringue and the chemical leaveners. Its oil-based batter is initially blended before folding into the meringue.

( Usually lemper is wrapped in banana leaves,I couldn't find one,so i modify it by using panko bread crumbs and fried them in cooking oil)
      Lemper (sometimes lemper ayam) is an Indonesian dish made of glutinous rice filled with chicken, fish or abon (meat floss). The meat filling is rolled inside the rice, in a fashion similar to an egg roll; this is in turn rolled and wrapped inside a banana leaf, oil paper, plastic sheet or tinfoil to make a packet ready for serving. Lemper are most often seen as snacks, but may sometimes be served as appetizers as well.

Resep Nasi uduk! super wangi dan legit ٩(^◡^ )♥

NASI UDUK/COCONUT RICE

      Nasi uduk is an Indonesian style steamed rice cooked in coconut milk dish originally from Jakarta,which can be widely found across the country. ( In Malaysia they also have a similar type of rice which is called as 'Nasi lemak'). 
     Nasi uduk literally means "mixed rice" in Betawi dialect, related with Indonesian term aduk ("mix"). The name describes the dish preparation itself which requires more ingredients than common steamed rice cooking and also varieties of additional side dishes.
    Nasi uduk is made by cooking rice soaked in coconut milk instead of water, along with clove, cassia bark, and lemongrass to add aroma. Sometimes knotted pandan leaves are thrown into the rice while steaming to give it more fragrance. The coconut milk and spices gave oily rich tastes to the cooked rice. The bawang goreng (fried shallots) sprinkled on the top of the rice prior to serving. Assortments of dishes are usually served as side dishes. AYAM GORENG KREMES

      "The spice mixture may vary among regions, but usually it consists of a combination of ground shallot, garlic, Indian bay leaves, turmeric, lemongrass, tamarind juice, candlenut, galangal, salt and sugar. The chicken pieces are soaked and marinated in spice mixture for some time prior to frying, in order for the chicken to absorb the spices. The chicken is then deep fried in an ample amount of hot coconut oil. Ayam goreng is usually served with steamed rice, sambal terasi (chili with shrimp paste) or sambal kecap (sliced chili and shallot in sweet soy sauce) as a dipping sauce or condiment and slices of cucumber and tomato for garnish.      There are many variants of fried chicken in Indonesia. But one of the most popular is Ayam kremes (also my favourite). In Indonesian, Ayam means chicken and kremes means crunch. Ayam kremes is a traditional Indonesian style Fried chicken served with crispy granules from the left-over of the chicken stocks and spices (from boiling the chicken),mixed with water, flour and egg, then deep fried in hot oil. Usually, Ayam kremes is served with 'nasi uduk' ( recipe here ) and 'sambal terasi' (chilli sauce with shrimp paste) as it's compliments. And most Indonesian always love to enjoy this meal with a cup of tea ( either iced or hot, either sweet or plain ).

cookies sagu keju ^_^ super renyah dan meleleh dimulut..

SAGO CHEESE COOKIES

      Sago cheese cookie is a modernized 'kue bangkit', an Indonesian traditional cookies which are mainly made of Sago flour ( you can also use tapioca flour ) and coconut milk. But unlike their 'ancestor', Sago cheese cookie contains butter and cheese in the mixture. Usually these cookies are served on special occasions like Hari raya idul fitri, Chinese new year or Christmas. 

      Sago cheese cookies and kue bangkit has a nice strong coconut milk aroma. When you bite them, it will melts right away in your mouth. Once you tried them out, you wouldn't wanna stop. Yes,this is a very addictive type of cookie. My mom could finish one full jar in just one day! (Lucky for her ٩(˘◡˘)۶, I can make one for her every time she craves for one). For those who haven't tried this cookie before, i recommend you to try making them ^^ (You'll know why she could be so addicted to it).

   Bolu kukus is a traditional Indonesian steam cake. It has a signature 'bloom and crack' shape on the upper part of the cake, which is unexpectedly not very easy to achieve. You might have to try several times before achieving successfully 'bloomed and cracked' cakes. Usually this cake is made with soda water such as Sprite/Fanta.(You can find recipe here).

    But in this post i will give you a recipe which will substitute the use of soda water with milk.Milk is a healthier option for those who would like to skip soda water in their daily menus.So for those who want to make this cake without using soda water, please feel free to try out this recipe ^_^

Homemade Yakiudon ala restoran Jepang ٩(˘◡˘ )♥ enak dan super kenyal!

     I have been writing some posts about Indonesian food and i think why not i change a little atmosphere by making a post about Japanese stir-fried udon (yakiudon) with the noodles made from scratch.
    You can easily find udon noodles in almost any grocery store in Jakarta now. But the thing that makes cooking a little more challenging is how you can make everything from scratch. How you can transform wheat flour ,salt and water into a delicious chewy noodles that is so tender and fresh. No whitening or any unwanted chemical substances, and most of all ,It is preservatives-free. 
      This homemade noodles has a slightly different texture with the one bought in stores. It has a more chewy texture , and the color is a bit yellowish. Not as pale and white as those store bought udon. And you can adjust the thickness of the noodles yourself. It's a bit time consuming but once you have made it, you will know it is worth it.
